Fuet Anis

This is classical Catalonian charcuterie.

This Embutido consists of pork and fennel.

 

In my eyes, the sweet flavor of the pork, in hand with the plump whole fennel seeds, is what makes this Embutido great.

 

Stuffed in 35mm casings then hung in curing rooms for 2-3 weeks, it makes a perfect addition to any smallgoods plate.
